Sometimes getting dinner on the table seems like a daunting task, but with a little preplanning, it can be quick and easy and even save you money. These quick and easy dinner recipes make getting dinner on the table faster than ordering take-out!

This first recipe is great for the Mexican food lover. The soup and sour cream combine with the taco sauce and chilies to create a creamy but flavor filled sauce. The chips add a simple but nice contrast. You can control the spiciness of this dish by using either a hot or mild taco sauce.

Chicken n’ Chips

1 can cream of chicken soup

8 ounces sour cream

2 tablespoons taco sauce

1/4 cup chopped green chilies

3 cups cubed chicken

12 slices American cheese slices

4 cups broken tortilla chips

Stir together the soup, sour cream, taco sauce and chopped chilies.

In a shallow 2 qt baking dish layer 1/2 of the chicken, soup mixture, cheese and tortilla chips. Repeat Layers.

Bake uncovered at 350 degrees for 25-30 minutes or until bubbly.

Serve the Chicken n’ Chips with Spanish rice, refried beans and a fresh, crisp salad.

The second recipe is an easy spin on the traditional comfort food of Beef Stroganoff. The aroma of the garlic cooking is fabulous. The flavors meld together very nicely.

Quick and Easy Beef Stroganoff

1 pound beef round steaks – cubed

1 onion chopped

1 4-ounce can mushrooms do not drain

2 teaspoons minced garlic

3 teaspoons beef bouillon

3 cups water

4 cups medium egg noodles

1 cup sour cream

Spray a large pot with cooking spray. Cook beef, onions, mushrooms and garlic over medium high heat. Stir occasionally until meat is cooked through.

Add water, beef bouillon, egg noodles and sour cream to the meat mixture. Turn the heat up to high and bring to a boil.

Once boiling, turn heat down to low (do not cover). Cook on low for 5-7 minutes until pasta is desired doneness, stirring occasionally.

Remove from heat. Let sit 4-5 minutes before serving. Sauce will thicken as it stands.

To round out this meal, serve with fresh rolls that are warmed in the oven and canned or frozen peas.

This third recipe is a stick to your ribs kind of meal. The stuffing gives this recipe a nice change of pace from your tradition meat and potatoes type dinner. This recipe is also very budget friendly.

Hearty Hamburger Casserole

1 pound ground beef

1 19-ounce can chunky vegetable soup

1 6-ounce package instant stuffing mix

1/2 cup shredded Cheddar cheese

Brown beef in a large skillet until no longer pink. Drain any fat and stir in soup. Set aside.

Prepare stuffing mix according to package directions while beef is cooking.

Spray a 2 qt baking dish with cooking spray. Spoon half of the stuffing into baking dish. Layer with beef mixture, cheese and remaining stuffing.

Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.

This is pretty close to a one-dish meal, but to make it complete, serve with fresh, warmed rolls and a side salad.

Garlic Shrimp with Angel Hair Pasta is a meal that is quick to fix, is not expensive, and will impress those you are serving.  This dish is even good for entertaining when you don’t have a lot of time to prepare.  Your guest will never realize you spent so little time preparing their meal!  (And we won’t tell if you won’t!)  Just add a salad, the bagged ones from the store will be fine by adding some croutons and a sprinkling of sunflower seeds, some garlic bread and a simple dessert.  You have a meal that is quick, easy, and delicious.

GARLIC SHRIMP WITH ANGEL HAIR PASTA

12 oz pkg angel hair pasta (thin spaghetti may be substituted)

2 1/2 tbsp butter

2 tbsp olive oil

2 tbsp minced garlic

1 lb peeled, deveined large shrimp (if frozen, thaw)

1 tbsp grated lemon zest

1/4 tsp salt

1/4 tsp crushed red pepper

1/4 cup lemon juice

1/3 cup chopped fresh parsley

Bring a large pot of lightly salted water to a boil. Add the angel hair pasta and cook as directed on package. Reserve 1 cup of the pasta water before draining.

Heat 2 tablespoons of the butter and the olive oil in a large nonstick skillet over medium-high heat. Add the garlic and cook about 30 seconds. Add the shrimp, lemon zest, salt and red pepper; saute over medium heat 3 to 5 minutes or until the shrimp is just cooked through. Stir in the lemon juice and remove from the heat. Pour mixture over the drained pasta, add the remaining butter, parsley, and about 1/2 cup of the cooking water (more if desired). Toss to mix and coat.

Protein Pancakes – These tasty pancakes are packed with protein, fibre and slow digesting carbs that provide all-day energy.

Ingredients:

1. 3 whole eggs

2. 3 egg whites

3. 2 level scoops of Vanilla flavoured protein powder

4. Half a cup of rolled oats

5. Cucumber

6. Onion

7. Pinch of salt and ground pepper

8. 1 teaspoon of extra-virgin olive oil

Mix together the eggs, egg whites, protein powder and oats. Grate the cucumber and onion into another bowl and stir in the black pepper, salt and minced garlic. Combine with the first bowl of egg, protein powder and oats. Pour olive oil into a non-stick pan and heat to medium, and then add in the mixture. Half a cup of the mixture creates an approximately 6-inch pancake. Let the mixture cook for at least 3 minutes before flipping it over to cook the other side. Serve. The entire mixture makes 6 pancakes.

Grilled Prawns – Prawns are a good source of protein, iron, zinc, vitamin E and omega-3 fatty acids that reduce the risk of heart disease. However, take these in moderation as seafood is high in cholestrol.

Ingredients:

1. 3 large prawns (each prawn about 100 g)

2. a sprinkling of salt

3. a sprinkling of pepper

4. 3 cloves of garlic, chopped

5. 3 teaspoons of olive oil

6. Canola oil

7. English parsley, finely chopped

8. Half a lemon

Cut the prawn feelers off with a pair of scissors. Using a knife, slice the spine of each prawn and remove veins, if any. Sprinkle salt and pepper along the sliced spine. Add garlic and drizzle olive oil evenly over the prawns. Simply brush some Canola oil on the prawns before placing them on the grill. After a minute or so, when the prawns turn red, flip them over and grill for another minute or so.

Finally, squeeze lemon juice over it and sprinkle parsley.

Protein Milk Shake – This great-tasting, mouth-watering, high-protein dessert will be absolutely delightful after a day of hard work. You could start your day with this as your breakfast as well.

Ingredients:

1. 1/2 cup of low-fat, fresh milk.

2. 1 level scoop of chocolate – flavoured (or any other flavor depending on your preference) protein powder.

3. 6 ice cubes.

Combine and put them into a blender. Blend until you get a smooth, creamy protein milk shake. Serve with extra ice if necessary.

High-Protein Peach Ice Cream – Another fantastic dessert that will leave you hungry for more.

Ingredients:

1. 3 pounds peach, peeled and pitted.

Stir the food once or twice giving intervals before you finally switch off. Stirring distributes the heat evenly.

To cover the bowl, plastic wrap can be another suitable option instead of a lid. However, refrain from using metallic foils. They may spoil the food. Also while cooking pieces of various sizes, keep the bigger pieces beneath the smaller ones. Cooking becomes easy.
